You really need to understand what happened in 2010 to understand pairing. In 2010 BLE (bluetooth low engery) launched. Before this pairing was the only way. Bluetooth Classic only supported point-to-point links and had no concept of just connect without identity.

You needed pairing to prevent speakers blaring random people’s audio, keyboards typing into strangers’ laptops file transfers being hijacked...
